If I had to guess, I would say your IMAP server is providing 
"capabilities" as soon as you open the connection to port 143.

Not all IMAP servers do this (and in Dovecot for instance it's 
configurable) and many IMAP clients don't expect it and freak out when 
they receive it (like Outlook express).  Looks like RoundCube (for now 
at least) might be in the "freak out" group.
