My entire /www/roundcube folder is 85MB, ../vendor is 23MB.

On the previous version of Rouncube, vendor is 80MB (almost all of which is php-unit). Maybe you misplaced a decimal?

du -h -d 2 /path/to/roundcube | sort -h

imma go out out on a limb and say that no, 800MB in vendor is not needed.
