In case you are not aware, the current version of Roundcube only ships with the elastic skin. The developers said they will not be maintaining the other skins anymore. I doubt they will put effort into adding a feature to have different skins based on device.

But with Roundcube being accessible PHP, someone knowledgeable could custom hack in some PHP code to add that feature to their system.
