Not an answer, but a workaround: I guess you could create a DNS record which would always point to the right server, and use that record internally.
DNS wouldn't work, it's too unreliable. A loadbalancer would work, but id much rather find a way to ignore the mail_host in the DB, because IF it goes wrong, it goes really wrong. I end up with users without their address books, identities, etc etc.
