Please, it should not be greyed out. Reply-all is commonly used for mailing list communications since time immemorial.
Many more people then you may think read lists through archives and disable list delivery. I am one of those persons.
Some then set their own Reply-To (which mailman does not strip unless we tell it to) so that responses end up in their INBOX and they know they have been responded to.
That setting an extra Reply-To header I don't do, but I have addresses subscribed to lists delivering lists' traffic to shared folders instead of my personal folders.
Roundcube seems to just insert the Reply-To address in the list of recipients upon Reply and Reply-All, that's fine.
