1.) We're aware of the charset problem. Should be working it out.
2.) The language saving is an issue that has been solved, and patched.
Download the patch to 0.1 beta.
3.) Change the default in the config file, that's the only way I
currently know how.

Additionnaly, is there also the possibility to set "default" language to french for all new users ? (I did it by changing manually in the source, but that's not faire).
