The headers delimiter can be configured in config/main.inc.php: $rcmail_config['mail_header_delimiter'] = "\n";

I have tried doing a str_replace in the sendmail.inc file for the headers. Also have set it up to run off a postfix/SMTP install. $header_str = str_replace("\r",'',$MAIL_MIME->txtHeaders($send_headers)); was able to clear the below headers.
