So wait, it's a problem with my IMAP server or with the IMAP config in Roundcube?
How should I ask for help with this issue from my hosting company? Same question as I'm asking here?

This is most likely some limit on the IMAP server, which limits concurent logins from different IPs.
I agree, this has to be an IMAP config issue. I login to my RC simultaneously from multiple machines on a daily basis, and have for the 2+ years we've been using RC.
