My Postfix was creating both a user@host.domain.com and a user@domain.com for each user I had and RC was grabbing the www.domain.com user as the default identity. I had to reconfigure my Postfix to stop creating the user@www.domain.com address for each user.
As stated, I am using ISPConfig, so I made my changes within it's configuration interface. You'll have to sort out how to change your own MTA's configuration to make it stop creating a host.domain.us entry for your users.
I don't understand. When I send mail from my MTA (Postfix), it's received as expected. When I send mail using Roundcube, it adds the FQDN to the address.
