Don't use Roundcube from the Ubuntu repositories, the software there is out of date.

Instead, follow the installation guide on the wiki: http://trac.roundcube.net/wiki/Howto_Install

Since this is a manual install, you get to choose where the files go and you can easily place them in your document root.
