Maybe good to standard support alt+s to send the email (outlook) and maybe also add whatever apple mail key combination uses.
I'm no developer, so maybe I'm not a great judge of what may or may not be possible, but Roundcube is a web app, accessed via web browser. Given that there's no client side app, outside of the web browser, to intercept the keystrokes/shortcuts, I'm not sure that the Roundcube devs would be able to implement what you're asking for.
