Is there any work being done on users being able to "register" via roundcube ? From googling, it appears as though you can only have accounts for IMAP accounts that exist on the server ?
Are there any extensions that might cover this ??

Look at RoundCube like Thunderbird.
Can you create email accounts from Thunderbird?

Imapds are very specific, there is just no way there is a "one fits all"-solution to this.
